Shinjitsu (Truth)

My blockmates and I went to Pansol, Laguna today to have our own version of “Christmas party”. At the end of the day, one of them asked me if I enjoyed it. Of course, I had fun. [Though, I was only there for quite some time.] I cooked…okay, I sliced and ONLY fried a whole sweet ham for our lunch. I managed to be a photographer “kuno” for about an hour to shoot some precious moments while my blockmates were in the pool. They even dedicated songs for me and sang at the top of their voices. [And little did they know, I sang a couple of songs too while they were busy playing poker and taking shower upstairs.] It was fun.

But, it seemed like something was still missing.

I took a photo before we left the place and edited it to describe what I feel as of the moment.

Happy, yet restless.

Thanks to Anchor Recipes. I will definitely try this when I get home.

Ingredients

• 1/4 cup ANCHOR UNSALTED BUTTER, softened
• 1/4 cup ANCHOR FAMILY SPREAD
• 1/2 cup powdered sugar or confectioners’ sugar
• 1/2 teaspoon vanilla extract
• 75 g cashew nuts, finely chopped
• Lady fingers (Broas), each cut into small pieces
• Graham crackers, crushed

Directions

1. DO FILLING. Whip ANCHOR butter and ANCHOR family spread until smooth. Add powdered sugar and vanilla extract. Beat until creamy and well-blended. Set aside about 1/4 cup for decorating. Mix in chopped cashew nuts.
2. ASSEMBLE. Spread about 1 teaspoon butter cream on lady finger piece. Top with another piece to make it look like a sandwich. Repeat this procedure until you have approximately 12 sandwiches.
3. SPREAD a thin layer of butter cream all over each lady finger -butter cream sandwich. Roll and cover sandwiches in crushed Grahams.  Chill and serve.

A nice thing to have for Noche Buena. :)
